Preheat the oven up to 425 degrees Fahrenheit. Use a foil to line a cookie sheet.
Cut all the veggies into 1 ½ chunks. Put them in a large bowl together with the olive oil, garlic cloves, and thyme leaves.
Spread out the veggies on the cookie sheet. Make sure it’s one layer only. Sprinkle, with black pepper and salt.
Roast the oven for approximately 45 minutes. Stir once halfway through cooking. Wait until the veggies are golden and tender.
Serve while hot with the delicious crab cakes.
