Ingredients
  • 1 bunch trimmed and scrubbed beets red or golden
  • 1 peeled and seeded butternut squash
  • 6 - 8 whole garlic cloves
  • 1 peeled large yam peeled
  • 1 peeled large parsnip peeled
  • 1 peeled large carrot peeled
  • 1/2 red onion
  • Salt and pepper
  • 3 fresh thyme leaves
  • 3 tablespoon extra-virgin olive oil
Instructions
  1. Step 1:

    Preheat the oven up to 425 degrees Fahrenheit. Use a foil to line a cookie sheet.

  2. Step 2:

    Cut all the veggies into 1 ½ chunks. Put them in a large bowl together with the olive oil, garlic cloves, and thyme leaves. 

  3. Step 3:

    Spread out the veggies on the cookie sheet. Make sure it’s one layer only. Sprinkle, with black pepper and salt. 

  4. Step 4:

    Roast the oven for approximately 45 minutes. Stir once halfway through cooking. Wait until the veggies are golden and tender. 

  5. Step 5:

    Serve while hot with the delicious crab cakes.
